This apricot oatmeal cookie shake is basically dessert in a cup! Made with dried apricots, vanilla protein powder, and rolled oats this shake really tastes like a cookie without the guilt…what could be better?
On a recent visit to Monterey with my family, I stumbled across this quaint little cafe downtown. At 55 degrees, a strong wind chill, and light drizzle, this was definitely not your typical beach day. Eager to find a hot cup of coffee to warm us up, my boyfriend, Kenny, and I discovered Red House Cafe, a family owned restaurant with cozy seating, a jovial staff, and a dessert display that made our mouths water.
The crown jewel of the pastry display was an Apricot Oatmeal Cookie with Pecans. Kenny and I just ordered a couple of lattes but the other patrons were raving about this cookie. I even noticed a few newspaper clippings and awards that the cafe had earned thanks to this little cookie.
My first thought was to replicate the cookie at home, and I will probably still do that at some point. However, when I found myself staring at a bag of dried apricots the other day I decided to imitate the flavors of the cookie in a refreshing (and much healthier) protein shake!
I didn’t have big expectations for this shake…I hadn’t even tried the cookie so I had no idea what I was in for…it was love at first sip!
To be honest, I was even a little surprised by how delicious the shake had turned out! It was perfectly creamy and frosty with a nutty sweet flavor that boasted hints of cinnamon (even though I hadn’t added any!)

apricot oatmeal cookie shake
1/2 cup unsweetened coconut milk
2 Tbsp greek yogurt (plain flavored, low fat or full fat are okay)
1/4 cup raw almonds
4 dried apricots (find the apricots with no added sugar – you shouldn’t see sugar listed in the ingredients list)
2 Tbsp rolled oats (uncooked)
1 tsp ground flax seeds
1 scoop vanilla protein (my favorite is Vega)
1/2 tsp vanilla extract
5-6 ice cubes
Blend well and enjoy!
