I have tried to make a cauliflower crust several times before and failed miserably. The recipes I used either called for a ton of ingredients or the result was a soggy mess that didn't resemble pizza crust in any way, shape, or form. After several failed attempts, I was almost at the end of my rope but decided to give it one last shot and come up with my own recipe.
 
I used the best practices from other recipes I had found and through trial and error, tweaked it until it was just right. I hope you enjoy this recipe and can learn from my mistakes to make your gluten free pizza experience fun and delicious!

Ingredients
  • 1 head cauliflower
  • 1 C mozzarella cheese
  • ¼ C grated parmesan cheese
  • 1 large egg
  • ½ tsp salt
Instructions
  1. Preheat oven to 375 degrees and line a cookie sheet with parchment paper...you're ready to rock!
  2. Using a food processor, chop the cauliflower until you get tiny pieces (it should be the consistency of sand).
  3. Zap the grated cauliflower in the microwave for 3 minutes. Let the cauliflower cool until you can handle it.
  4. Add the egg, the cheeses, and the salt. Use your clean hands or a big spoon to thoroughly combine everything.
  5. Once the mixture is combine, dump onto the parchment lined cookie sheet and use a rubber spatula to form the "crust" into a rectangular shape.
  6. Bake in the oven for 25-30 minutes until the top is lightly golden brown and you can lift up the edge of the crust using a spatula.
  7. Top any way you like...I used Trader Joe's pizza sauce, mozzarella cheese, and garlic sautéed mushrooms.
  8. Enjoy!
