Coconut. Bacon. Need I say more?! I was intrigued when I first heard about this amazing concoction and started scouring the internet for places to purchase it. To my surprise, I found a ton of recipes that seemed very easy to execute with a few ingredients that I already had on hand.
After some experimentation, I nailed down this recipe that you can throw together with less than 5 ingredients and a few spare minutes.
I know what you’re thinking…does this really taste like bacon? Well, you won’t be able to fool your carnivore boyfriend into believing he’s chomping down on a piece of salty sow but it is tasty! Coconut bacon, is a yummy, smoky, salty, crunchy condiment that I love to add to vegan ice cream, avocado toast, and peanut butter banana sammies.
2 Cup unsweetened coconut chips
2 Tablespoons maple syrup
1 Tables soy sauce or Braggs’ liquid amines (if you’re not consuming soy)
1/2 teaspoon smoked paprika
1 teaspoon liquid smoke
Heat an oven to 350 degrees.
Mix maple syrup, soy sauce, paprika, and liquid smoke together.
Gently toss the coconut chips in the “bacon sauce” using a rubber spatula.
Line a baking sheet with aluminum foil and spread a layer of coconut onto the pan.
Bake for 20minutes, opening the oven every 5-6 minutes to toss the “bacon” around.
Keep an eye on the coconut shreds so they don’t burn. Remove the bacon from the oven and when it cools start finding creative ways to use your tasty new topping!
