These date sweetened mounds bars have all the flavor of my favorite childhood candy bar without any of the processed sugar! Date, coconut, and chocolate…what could be better?
I love finding ways to keep my chocolate craving satisfied without sacrificing my waistline. Dates have become my best friend and my secret weapon when it comes to eliminating processed sugar. This is a fresh take on the classic mounds bar and it comes together with only 4 ingredients!
I’ve been asked if the sugar in dates is bad for weight loss. My simple answer; sugar in any form (processed, fruit, juices, etc.) should certainly be limited for overall health and weight loss. However, when you consume sugar from unprocessed sources like dates and other fruits, you are also consuming vitamins, some water, and fiber. The fiber in fruit is the key player in allowing your blood sugar to stay steady. Essentially, processed sugar is empty calories while fruit also offers some health benefits!Print

A healthy, raw alternative to the classic childhood treat!
- 10 dried medjool dates (pitted)
- 1/4 Cup hot water
- 2 Cups unsweetened, shredded coconut
- 1/4 Cup cacao powder or baking cocoa
- 2 Tablespoons raw virgin coconut oil (melted)
- 1 food processor
- 1 baking pan (8X8)

- Bring the water to a boil. It’s best to heat more than 1/4 Cup of water in case some evaporates or if your dates are extra dry.
- While the water boils line your pan with parchment paper and remove the pits from the dates and put them in a large bowl.
- When the water boils, measure out 1/4 Cup of water and pour the hot water over the dates until they’re fully covered. You can use a spoon to push the dates down into the water.
- Let the dates soak in the hot water until the water comes to room temperature (approximately 10minutes).
- Once the dates are soft, place the dates with the water into the food processor.
- Run the food processor until a paste forms.
- In a bowl, mix the shredded coconut and the date paste together until the coconut is fully combined with the dates.
- Lay the coconut, date mixture into a 8X8 pan lined with parchment paper and use clean hands to make a thin, even layer of coconut (about 1/2 inch). Note, the mixture may not fill the pan to the sides, rustic edges are a-okay!
- Place the baking pan in the freezer for 30minutes.
- While the coconut chills, combine the melted coconut oil and cocoa powder. You will not need to add sweetener because the dates are sweet enough.
- Once the coconut layer is very cold, cut the layer into even 1inch bars.
- Before you pull the bars apart, cover one side of the coconut layer with your chocolate mixture slowly spooning the chocolate sauce over the coconut.
- Return the bars to the freezer until the chocolate hardens (about 2minutes).
- Flip the bars over to cover the opposite side with chocolate.
- Once both sides are chocolate covered, you can cut through the chocolate, following the slices that you’ve already made.
- Keep these delicious treats in the freezer for best results!
- One of my friends made this recipe and simply topped one side with the chocolate sauce – this saved time and they were enjoying these raw treats in about 10minutes!
