A delicious and easy gingerbread latte recipe you can make at home without all the added sugar of coffee house favorites!

As I sit in my PJ’s next to the Christmas tree, trying to stay focused long enough to write a long overdue blog post, I can’t help but feel a little blue. Maybe it’s because winter break is halfway over. Maybe it’s because this is my first Christmas in 7 years as a single woman. Maybe it’s just the caffeine withdrawal headache that has been pounding away at me since this morning. Whatever it is, I can’t help but feel a little nostalgic and yearn for the cozy feeling of Christmas.

 

Whatever the cause, some kitchen creativity always helps me beat the blues and feel like my old self again. Since I love the taste of gingerbread lattes but hate filling my body with sugary, artificial sweeteners, I often opt out of holiday themed coffee shop drinks and create my my own, healthy versions at home…check out this pumpkin spice latte I made last year. This year’s gingerbread latte is super simple to make and you can even get the steamed milk effect using nothing but a mason jar and a microwave!

First, brew a strong pot of your favorite coffee. I love Gevalia or the mocha roast from World Market. Then you’ll need a small mason jar with the lid. Fill the jar about halfway with milk (anything from nonfat to whole milk…your choice).  You should have about 1/2 Cup milk in the jar.

Add 1 tsp powdered stevia, 1 tsp ground ginger, 1 tsp ground cinnamon to the milk in the mason jar. Screw the lid on the jar tightly and shake vigorously for 30-60 seconds.

Remove the lid and place the jar with the milk in the microwave for 30 seconds. This will heat the milk and stabilize the foam so you get the coffee house effect in a snap!

Slowly pour some of the flavored milk in with your coffee and use a spoon to scoop some extra, foamy goodness into your drink. Pop “Home Alone” in the DVD player and enjoy!

1/2 Cup low fat or whole milk

1 tsp powdered stevia

1 tsp ground cinnamon
