My mom owns an in-home daycare so I am constantly surrounded by kids {I actually have one of the rug rats on my lap as I write this =) }. The kids are adorable and keep us in stitches most days but meal times can often be a challenge. Most of the kids will scarf down chicken nuggets or mac and cheese and leave their veggies untouched.
Judging by the parents’ complaints, getting kids to eat their greens seems to be a challenge at home as well. But this smoothie isn’t just for kids. Even though I love vegetables and eat them at every opportunity, sometimes even I need a little help reaching my greens quota…which is where smoothies and fresh made juices come in.
I wanted to help parents and pick eaters address their veggie issues, so I started to experiment. I made several batches of fruit and veggie smoothies and had the daycare kids try them out.
[headline_georgia_small_left color=”#FF6600″]The problem was, most kids wouldn’t even try the smoothie if it was bright green, regardless of the taste.[/headline_georgia_small_left]
The smoothies tasted great, but I needed to find a way to camouflage the greens. The solution: MIXED BERRIES! The deep red and purple colors overpower the green spinach and leave you with a delicious and appetizing smoothie for you and the kids!

  • 1/2 C greek yogurt
  • 1/2 C unsweetened coconut milk
  • 2 tsp ground flax seeds
  • 1/2 frozen banana
  • 1/2 C to 3/4 C frozen mixed berries (use raspberries, blueberries, and blackberries to really hide those greens 😉 )
  • 1 C fresh baby spinach
  • 1 Tbsp honey
  • 1 tsp vanilla extract
  • ice
  • blend & enjoy
  • *For adults and post workout add 1 scoop vanilla whey protein + 1/4-1/2 C water
