{post workout paleo pancakes}

There’s nothing like a stack of delicious pancakes to motivate you through an intense workout. I love incorporating healthy protein and fiber into post workout meals. Post workout meals should not only satiate my hunger but they must supply my body with much needed nutrients to help build muscles and recover from strain. This pancake recipe has all the fixings of a perfect post workout meal, including added potassium (from bananas) to help prevent muscle soreness and restore electrolyte balance.

Ingredients
  1. 1/4 Cup raw cashews
  2. 1 banana
  3. 2 eggs
  4. 1 tsp vanilla extract
  5. 1 teaspoon ground flax seeds
  6. 1 teaspoon baking powder
  7. 1 1/2 teaspoons olive oil
  8. 1 Tablespoon brown rice protein
Instructions
  1. Using a food processor or blender, grind cashews until they form a flour.
  2. Combine the cashew flour and the rest of the ingredients in a blender.
  3. Blend until the pancake batter comes together.
  4. Heat a nonstick skillet over medium heat.
  5. Pour small amount of batter onto the heated skillet, cook until bubbles form in the middle of the pool of batter, carefully flip the pancakes and cook on the opposite side.
