The weather is hot and nothing hits the spot like this cashew and date iced latte. I soak raw cashews and medjool dates before blending them into a creamy non-dairy beverage. Then I combine a shot of espresso with the dates-sweetened cashew milk and serve it over ice. This refreshing summer beverage is cool and energizing; the perfect drink for a hot summer day.

I spent most of my life in Northern California. My parents moved to the Bay Area from Germany when I was 6 years old and it’s the only home I’ve ever known. Moving to the East Coast in February was a big transition, especially as it pertained to weather. Northern Californians enjoy 300+ days of sunshine and some of the most beautiful, temperate climate year round. Not to sound ungrateful, but this was one of the things I was hoping to shake up when we moved.

So far I’ve experienced a snowy winter, a brisk and beautiful spring, and a hot and muggy summer. I might regret saying this in a few years but as a weather newbie, I’ve loved every second!

Experiencing four true seasons after a lifetime of mild climate is extremely interesting. There is a palpable cadence to life and cooking with the seasons is so much fun. Nothing hits the spot like hot stew on a cold February day or an ice cold beverage (ie. this cashew and date iced latte) on a humid July afternoon. I look forward to visiting my family in California and enjoying the predictable, sunny weather. In the meantime, I’ll be sipping my iced latte and enjoying the humidity. To the mid-summer thunderstorms I say: ‘bring it on’!

  • ½ cup raw cashews
  • 2 medjool dates, pits removed
  • 1 ¼ cup boiling water
  • ⅛ teaspoon ground cinnamon
  • 2 shots espresso
  • 2 cups filled with ice cubes


  1. Combine the cashews and dates in a medium bowl. Cover with boiling water and let the mixture sit until the water cools down and the ingredients soften, 30 minutes.
  2. Pour the cashews, dates and water in a blender. Add the cinnamon and blend until smooth and fully combined.
  3. Fill two glasses with ice and pour one shot of espresso into each glass.
  4. Divide the cashew milk among the two glasses, stir and enjoy!
