These easy, delicious ground beef tacos with homemade seasoning are ready for your cinco de mayo feast!

We’re living in interesting times. The whole world is fighting against an invisible enemy (COVID-19) and many of us are fortunate enough to be “stuck” at home. Whenever I start to lament my canceled travel plans or the fact that I haven’t seen the ocean in 7 weeks, I think about people who’ve lost income and loved ones in the passed few months. I pray for comfort and peace for those less fortunate and I’m filled with gratitude. To be bored or stir crazy is an amazing blessing right now and I thank God that my family is healthy and my job is secure.

I hope my dear readers are safe and happy and have the privilege of cooking for their loved ones.

To celebrate this quarantine cinco de Mayo, I’m cooking up some really simple ground beef tacos. Most of the ingredients were already stashed away in my pantry and freezer so the meal will come together in no time.

The tacos are completely “build it yourself” so the folks you’re quarantined with can mix and match their toppings to suit their tastes and diets.

ground beef tacos with homemade seasoning

  • 2 tablespoons olive oil 
  • 1 large yellow onion, diced
  • Kosher salt 
  • 2 pounds ground beef, 85% lean 
  • 3 cloves garlic, minced 
  • 2 teaspoon paprika 
  • 2 teaspoons smoked paprika 
  • 2 teaspoons dried oregano 
  • 1 ½ teaspoon ground cumin
  • ½ teaspoon cayenne pepper powder 
  • 1 teaspoon garlic powder 
  • 3 tablespoon tomato paste 
  • 1, 15-ounce can tomato sauce
  • 3/4 cup water 
  • Juice of 1 or 2 fresh limes 


  1. Heat olive oil in a large frying pan over medium heat. 
  2. Add the onion and ½ teaspoon kosher salt. 
  3. Cook until the onions are translucent and starting to brown around the edges, 5-6 minutes. 
  4. Add the ground beef, increase the heat to high and cook, breaking the beef up into small pieces with a wooden spoon until the meat is browned, 6-8 minutes. 
  5. Decrease the heat back down to medium. Add the garlic, paprika, smoked paprika, oregano, cumin, cayenne pepper, garlic powder, and 1 teaspoon kosher salt to the beef. Cook until any liquid has evaporated and the spices are fragrant. 
  6. Add the tomato paste to the meat, stir and cook until the tomato paste is dark red, 2-3 minutes. 
  7. Add the tomato sauce and water to the meat, reduce the heat to a simmer. Simmer the meat for 20-30 minutes over low heat, stirring occasionally to make sure the meat doesn’t burn. 
  8. Add the juice of 1 lime, taste and add more salt and lime juice if desired. 
  9. Serve with your favorite fixings!

  • Hard or soft corn tortillas
  • Flour tortillas
  • Shredded romaine or iceberg lettuce
  • Salsa
  • Guacamole
  • Shredded cheese
  • Sour cream 
  • Diced red or yellow onion
  • Fresh cilantro
