These s’mores crispies treats are the perfect no-bake dessert: combining s’mores and rice crispies treats into delicious summer indulgence. I moved to the U.S. when I was six years old. Four months after I was born, my young parents fled Iran and sought political asylum in Germany. We lived in Germany for half a decade, dreaming of joining my maternal relatives in America. After years of unsuccessful attempts to obtain U.S. visas, my family was granted entry to the land of opportunity. We’ve proudly lived here ever since.

Due to our complicated immigration status, it took twenty years for me to gain U.S. citizenship. During the oath ceremony they played “God Bless America” and I was overcome with emotion. Hot tears rolled down my face as I remembered the suffering my parents endured. From fleeing their homeland in the dead of night (with an infant) to starting over in two foreign countries, just so my siblings and I could grow up American. I owe so much to my parents’ sacrifice and I’m forever grateful for the opportunities I’m afforded in this country.

As a naturalized citizen I have a deep appreciation and respect for all things American. Independence Day is no exception and I love to gather with loved ones to celebrate my freedom.

To me, 4th of July is a sacred holiday that deserves a special patriotic treat. S’mores and rice cereal treats are two quintessential American snacks so I decided to combine them into one delicious recipe. I toast the marshmallows under a broiler before combining them with rice cereal, adding s’more flavor to the whole batch. These treats are easy to make, portable for summer potlucks, and a fun upgrade to the childhood classic.

A delicious cross between s’mores and marshmallow rice cereal treats!


  • Canola oil spray (or other neutral oil cooking spray)
  • 2 10-ounce bags of marshmallows (regular sized)
  • 4 tablespoons unsalted butter 
  • ½ teaspoon sea salt
  • 6.5 or 7 cups crisp rice cereal (for gooey rice treats use 6.5 cups, for firmer treats use 7 cups)
  • 5 ounces dark chocolate, chopped
  • 3 honey graham crackers, (ground in a food processor or cut into ½ inch pieces using a serrated knife)


  1. Adjust an oven rack to the top third position. 
  2. Preheat broiler. 
  3. Coat the bottom and sides of a 13X9 inch baking dish with cooking spray. 
  4. Line a cookie sheet with a silicone baking mat. Lay the marshmallows on the baking sheet in a single layer.
  5. Place the marshmallows under the broiler until the marshmallows are toasted on top, 2-3 minutes. Keep a close eye on the marshmallows so they don’t burn. 
  6. Remove the marshmallows from the oven. Let them cool slightly. Flip the marshmallows around so the untoasted side is now on top. 
  7. Return the marshmallows to the broiler until the other side is toasted, 1-2 minutes.
  8. Allow the toasted marshmallows to cool slightly before removing them from the cookie sheet. 
  9. In a large pot, combine the butter, salt, and toasted marshmallows. Cook, stirring constantly, over medium heat until the butter and marshmallows have melted, 5-7 minutes. 
  10. Add the rice cereal to the pot and stir to fully combine with the marshmallows. 
  11. Dump the marshmallow cereal mixture into greased baking dish and use wax paper to press it evenly into the pan. You can also flatten out the top using the bottom of a measuring cup. 
  12. Let the mixture cool at room temperature, about 10 minutes.  
  13. While the marshmallow cools, melt the chocolate in a large bowl placed over a pot of simmering water, 5-6 minutes. 
  14. Spread the melted chocolate over the top of the marshmallow and rice mixture.
  15. Distribute the graham cracker pieces (or graham cracker dust if using a food processor) evenly over the melted chocolate. 
  16. Let the chocolate cool completely at room temperature, about 30 minutes. 
  17. Cut into squares and serve.
